Green Tacos

 
    • 50g egg whites

    • 25g spinach

    • 1/2 tsp baking powder

    • salt to taste

    • pepper to taste

    • toppings of choice

      (I used shrimp, avocado, romaine lettuce and tomato)

    1. In a blender, combine egg whites, spinach, salt and pepper. Blend until mixture is smooth and no spinach clumps.

    2. Add baking powder into mixture, blend until combined.

    3. Pour mixture in 3-4 circular shapes on a non-stick pan or griddle on medium heat.

    4. Once almost completely cooked through, flip “taco shells” to make sure other side is thoroughly cooked.

    5. Dress up your tacos with your toppings of choice!
