Ingredients:

 
  • 150g Zoodles

  • 50g Carrot Noodles

  • 1 - 2 Scrambled eggs or egg whites

  • 1 tsp Peanut butter powder

  • 1 tbsp Soy Sauce

  • 1/4 tsp Garlic Powder

  • 1/2 - 1 tsp Sweetener of choice

  • Pepper

  • Salt

Optional:

  • Green onion to garnish

  • Sesame seeds to garnish

  • Chili flakes to garnish

  • Olive oil for cooking

*This recipe makes 1 small portion, I suggest doubling this recipe if this is all you are eating for a meal

Instructions:

 
  1. Cook zoodles and carrot noodles for 2 min. in low heat, stirring occasionally.

  2. While veggies cook, mix peanut butter powder, soy sauce, garlic powder and sweetener in a small bowl.

  3. In a small pan, scramble egg and season with garlic powder, salt and pepper.

  4. Stir peanut-soy sauce into veggies.

  5. Add veggies into a bowl to serve and top with egg.

    Optional: sprinkle sesame seeds, chili flakes and green onion on top to garnish.
