Ingredients:
150g Zoodles
50g Carrot Noodles
1 - 2 Scrambled eggs or egg whites
1 tsp Peanut butter powder
1 tbsp Soy Sauce
1/4 tsp Garlic Powder
1/2 - 1 tsp Sweetener of choice
Pepper
Salt
Optional:
Green onion to garnish
Sesame seeds to garnish
Chili flakes to garnish
Olive oil for cooking
*This recipe makes 1 small portion, I suggest doubling this recipe if this is all you are eating for a meal
Instructions:
Cook zoodles and carrot noodles for 2 min. in low heat, stirring occasionally.
While veggies cook, mix peanut butter powder, soy sauce, garlic powder and sweetener in a small bowl.
In a small pan, scramble egg and season with garlic powder, salt and pepper.
Stir peanut-soy sauce into veggies.
Add veggies into a bowl to serve and top with egg.
Optional: sprinkle sesame seeds, chili flakes and green onion on top to garnish.
