Zucchini Brownies

1 zucchini
40g (2 tbsp) yogurt
150g egg whites
1 tsp vanilla extract
1/2 cup sweetener of choice
58g (1/2 cup) coconut flour
45g (1/2 cup) cocoa powder
1/4 tsp salt
1/2 tsp baking powder
1 tsp baking soda

Blend zucchini and wet ingredients in a stone blender or food processor until smooth.
In a large bowl, mix dry ingredients.
Pour wet ingredients into dry ingredients, fold until well combined.
Put batter into a lined baking dish and bake at 350°F for 30 minutes.
Allow to cool, and slice into 16 pieces.
