Zucchini Brownies

    • 1 zucchini

    • 40g (2 tbsp) yogurt

    • 150g egg whites

    • 1 tsp vanilla extract

    • 1/2 cup sweetener of choice

    • 58g (1/2 cup) coconut flour

    • 45g (1/2 cup) cocoa powder

    • 1/4 tsp salt

    • 1/2 tsp baking powder

    • 1 tsp baking soda

    1. Blend zucchini and wet ingredients in a stone blender or food processor until smooth.

    2. In a large bowl, mix dry ingredients.

    3. Pour wet ingredients into dry ingredients, fold until well combined.

    4. Put batter into a lined baking dish and bake at 350°F for 30 minutes.

    5. Allow to cool, and slice into 16 pieces.

    6. Enjoy!
