Coconut Flour Pancakes

1/2 cup coconut flour
4 large eggs or 200g egg whites or 2 eggs + 100g egg whites
1 tsp baking powder
1/3 cup water
Pinch of salt
1 tsp vanilla extract
2 tbsp sweetener
1 1/2 tbsp sugar-free pancake syrup

Sift together dry ingredients.
Add wet ingredients, stir until fully combined.
Allow batter to rest for 5 minutes.
Cook batter on a non-stick pan in circle shapes on low-medium heat. Flip once edges look set, and remove from heat once cooked through.
Top with toppings of choice (greek yogurt, berries, syrup, etc.) and enjoy!
