Coconut Flour Pancakes

 
    • 1/2 cup coconut flour

    • 4 large eggs or 200g egg whites or 2 eggs + 100g egg whites

    • 1 tsp baking powder

    • 1/3 cup water

    • Pinch of salt

    • 1 tsp vanilla extract

    • 2 tbsp sweetener

    • 1 1/2 tbsp sugar-free pancake syrup

    1. Sift together dry ingredients.

    2. Add wet ingredients, stir until fully combined.

    3. Allow batter to rest for 5 minutes.

    4. Cook batter on a non-stick pan in circle shapes on low-medium heat. Flip once edges look set, and remove from heat once cooked through.

    5. Top with toppings of choice (greek yogurt, berries, syrup, etc.) and enjoy!
