American Pancakes

 American Pancakes Recipe

  • for 1 serving (3 pancakes)

    • 20g all-purpose flour

    • 30g whole wheat flour

    • 1 tbsp sweetener of choice

    • 6g baking powder

    • 1g xanthan gum

    • pinch of salt

    • 25g greek yogurt

    • 27g unsweetened apple sauce

    • 10g egg whites

    • 2g vanilla extract

    • 100mL milk of choice

    1. Combine dry ingredients in a medium sized bowl.

    2. Create a well in the middle of dry ingredients, then add wet ingredients to the well.

    3. Stir until just combined.

    4. In a non-stick pan over medium-low heat, scoop batter into a circular shape.

    5. Cook on one side until bottom has browned, then flip.

    6. Cook on other side until both sides have browned.

    7. Once pancake is cooked, cook more pancakes with remaining batter.

    8. Stack pancakes and serve with your choice of toppings (I suggest greek yogurt, banana, and berries)

    9. Enjoy!
